Ingredients
4 pounds (1.8 kg) carrots,
peeled and chopped
6 apples plus extra apple
slices for garnish, optional
6 cups (1.4 L) vegetable broth
1 yellow onion, chopped
3 garlic cloves, chopped
1 to 2 teaspoon salt
Preparation
- With all the ingredients in a stockpot. Turn the stove to just above low heat, cover, and let simmer for an hour and half, until the vegetables and apples are softened.
- Take off the lid and remove from the heat.After the soup cools a bit, use blender to purée the ingredients together but be careful not to overfill it, and be sure the soup is not too hot when you transfer it to the blender.
- If the recipe needs a bit more salt, this a great time to add it. Serve warm. Garnish with apple slices, if desired. if want to add spice, black pepper sprinkle may be a good addition.
- It is recommended to have enjoy this when fresh however if you wish this will keep in the refrigerator for few days.
- This can be made in a slow cooker, too. Cook it on high for at least 4 hours, until the vegetables and apples are soft.
